Larry and I love breakfast but usually not until lunch time. The other day we went to one of our favorite places to eat and saw that their lunch menu had been extended until 12 noon. We were sooo excited! What I had was truly delicious I just had to write it down so I could re-create it at home. Here it is…give it a try!

Ingredients

Sourdough Bread sliced 3/4 inch thick

Butter

Avocado sliced and slightly mashed

Sea Salt

Pepper

Red Pepper flakes

Fried over-easy egg (optional)

Directions

Toast and butter the sourdough bread for as many servings as you need. Top with sliced and slightly mashed avocado. Season with salt, pepper and a little red pepper flakes. If you like eggs (of course, free range and from organically fed chickens!) you can top it with one that is fried, over-easy as that too was an option on their menu. Keep warm in your oven until time to serve. YUMMY!
