We’ve been enjoying the cool fall weather and have even had a few really COLD days! Nothing feels better than a nice bowl of homemade soup when the weather is chilly. I made this pot of potato/vegetable soup the other day and it was a big hit. Give it a try!

Ingredients: (for a large pot)

8 organic Russet potatoes

1 large organic yellow onion chopped fine (or more if you’d like)

2 medium organic carrots chopped fine

1 cup or so of frozen organic peas

1 cup or so of frozen organic corn

1 garlic clove

Real sea salt to taste

Fresh ground black pepper to taste

12 to 16 cups (more or less depending on how thick you want it) of organic chicken broth OR organic vegetable broth

Directions:

Sauté the onion in 1 stick of butter. Add the chopped carrots until mostly tender then add the garlic, salt and pepper and broth. Par-boil the peeled and chopped potatoes until fork-tender. Add the drained potatoes to the broth and the frozen peas and corn then simmer for 10 or so minutes before using an immersion blender to blend it all up. Taste to adjust the seasoning. We like a good amount of real salt and freshly ground pepper. ENJOY!
