This time of year tomatoes are amazing! I hope your personal garden is over-flowing with the organic and vine-ripened yumminess but if not, you are likely to find a good farmer’s market near you that does have them in abundance. Here’s a great, late-summer/early-fall salad for using all those tasty tomatoes!
3 tablespoons of Apple Cider Vinegar
1 tablespoon of Extra Virgin Olive Oil
1 teaspoon raw honey
1/2 teaspoon sea salt
1/2 teaspoon fresh ground pepper
1 medium to large cucumber sliced into rounds
4 medium to large tomatoes cut into chunks or wedges
1 Vidalia sweet onion (if you can find it or any other sweet onion) halved and sliced very thin
1 Tablespoon of green onion chopped fine
1 Tablespoon of flat leaf parsley
Whisk vinegar, oil, honey, salt and pepper in a large, shallow bowl.
Put everything else together in the bowl and toss…let sit to marinade for approximately 30 minutes (or up to an hour). Serve!
