Nothing says summer like cold, fresh watermelon! I had great fun with some neighborhood kiddos making this watermelon treat. They only needed a little bit of supervision and it was a refreshing reprieve from the summer heat. Give it a try.


1 seedless watermelon cut up into 1 inch cubes

1 cup heavy cream, chilled

1 cup mascarpone cheese, chilled

1/4 teaspoon pure vanilla extract

1 teaspoon agave syrup (or 1 tablespoon trehalose)

zest of one lime

1/2 lime–juiced

1/3 cup mini chocolate chips


With a tiny spoon, scoop out the center of each watermelon cube (of course eat what you remove as it makes waiting for this treat bearable!), set them upside down on paper towel to “dry” them a bit.

Combine the cream, mascarpone cheese, vanilla, agave, lime zest and the juice of the half lime. Beat until nice and thick using a hand mixer.

Fill each watermelon cube with 1 teaspoon of the filling. Top with a few mini chocolate chips and watch how quickly they get eaten up!
