Stuffed Artichoke Hearts

Here’s a twist to the traditional  Artichoke Dip—try stuffing the artichoke hearts with seasoned, cooked spinach then top with melted cheese. Bite-sized for a perfect appetizer on New Year’s Eve!


1 jar marinated artichoke hearts

2/3 cup lightly cooked, chopped spinach

1 clove finely chopped garlic

1/4 teaspoon sea-salt

1/8 teaspoon (or to taste) pepper

¼ cup finely grated, fresh parmesan cheese

¼ cup grated, fresh mozzarella cheese


1. Preheat broiler and arrange artichoke hearts on baking tray

2. Combine garlic, salt and pepper in a small bowl. Add the cooked spinach and mix well. Combine both cheeses. Top each artichoke heart with the spinach and cheeses. Broil until cheese melts–1 to 2 minutes. Watch it carefully or lower the rack in the oven so it’s not too close to the broiler.
