Vegetable Soup 

One large onion

½ to 1 teaspoon minced garlic

2 medium or 1 large carrot

1 large stalk of celery

1 medium to large zucchini

1 large can chopped tomatoes

2 quarts vegetable broth

1 can white beans or soak your own for 1 ¾ cup beans

1 small bag frozen chopped green beans

Grated cheese to top (optional)


Sauté onion in butter/olive oil approximate 2T each

Add minced garlic

3/4 teaspoon of salt and 1/4 t. of pepper (or more pepper if you like)

Add sliced carrots, celery and vegetable broth and simmer while slicing zucchini

Add zucchini, canned tomatoes with the juice, white beans and green beans

Simmer until vegetables are tender crisp

Adjust seasonings and enjoy!
