Kamut Tortillas

3 cups Kamut (ancient grain whole wheat flour)
1/4 t baking powder
1 t salt
1/4 cup olive oil (it might be fun to experiment with coconut oil too)
1 cup water


Combine all but the water in a food processor until it resembles corn meal.
Pour the water through the feeding tube and knead for a few minutes.
Roll into a ball and let it stand for 10 minutes covered. Roll into 10 small balls and let them stand covered for 10 minutes. Roll with rolling pin (or use a tortilla press) very thin and cook on a hot griddle a minute on each side.
