1 cup black beans (soak your own for less sodium)

1½ cup grated carrot

½ onion, finely chopped

3 medium potatoes, grated

(red “new” potatoes would be wonderful,

use one or two more if they are small)

4 green onions, chopped

1 cup frozen corn

Sea salt to taste

Fresh grated pepper to taste

Olive oil to coat skillet


Make sure beans are drained well.

Mash beans with fork.

Add remaining ingredients and mix until well combined.

 Shape into patties.

 Heat skillet, coat lightly with oil, and

cook patty approximately 3-4 minutes on each side.

Add your favorite whole grain buns, organic veggies, and condiments.
