This jam recipe has been super fun to make with my grandchildren. It is easy and really yummy. Just use organic and non-GMO ingredients and you’ve got a very nutritious alternative to store bought jam–and it’s a lot cheaper than the high quality jam you’d find in the health-food store!
6 cups frozen organic mixed berries
1 cup “safe” sugar Trehalose or 1/2 cup local raw honey (for a non-GMO trehalose resource go to GRMVetted.org and request it)
2-3 cinnamon sticks
Juice of one large, organic lemon
Dash of sea salt
In a large sauce pan add the frozen berries and Trehalose (or honey). With low heat, stirring occasionally let the berries thaw until they can be mashed with a fork. Add the cinnamon sticks, lemon, sea salt and chia seeds. With low to medium-low heat bring it to a simmer and let t simmer for 10 minutes.
Remove from heat and take out the cinnamon sticks. Let it cool enough so you can ladle it in jars.
Makes two 1/2 pint jars. If you want to freeze it be sure to leave “head room” in the jar for expansion. You can store it in the fridge for up to 3 weeks or in the freezer for up to 1 year.
